Director of Restaurants
### Description
The Director is responsible for assisting in the management of all food and beverage outlets. He/She will work in a professional, profitable manner by offering quality, consistent service to our guest. A strong emphasis to be placed on increasing service standards, developing future leaders, creating a service "farm system", controlling cost and maintaining resort assets.
* Administration and supervision of restaurant operations to include: Apex, Autumn, Aqueous, CaddyShack, Lautrec, Tavern and any other restaurants as determined by the Director of F&B.;
* Recruiting, hiring, training, development, accountability and evaluations of the restaurant management team.
* Assist in all departmental training as needed
* Opening, operating and closing checklist for each specific outlet.
* Support all outlets managers to ensure their development and success.
* Create an atmosphere that will attract and retain qualified associates based on the company's values.
* Review and maintain all guest comment cards and praise & council as needed
* Develop, promote and operate specialty nights
* Budgeting process
* Forecasting accurate outlet counts based on house count and history
* P&L; accountability and critique
* Review all general ledger charges for accuracy for all F&B; outlets
* Review flash report on daily basis and react accordingly
* Verify payroll accuracy with each outlet manager
* Monitor cash over/short reports
* Review all outlets PO's
* Review and monitor staffing guides
* Supervise all monthly inventories
* Take active role in all mandatory F&B; meetings (resume, ops, f&b;)
* Develop relationships with culinary team to develop, analyze and cost menus
* Play in instrumental role in achieving the company's goals
* Must have a degree in hospitality management or equivalent work experience in restaurant management.
* Excellent managerial skills, ability to manage multiple outlets, computer skills and accounting skills.
* Minimum of 5 years experience in the hospitality industry.
* Must have good communication and leadership skills as well as being friendly, outgoing and courteous.
* Must be able to speak English.
* Work at least 50 hours per week, flexible hours, and long hours. (Night, day, weekend, Holiday)
* Outgoing personality, able to travel.
* The Director is accountable for supervision, direction and development of all associates in the F&B; restaurant collection.
* Accountable for budgeting and upholding all aspects of the P&L.;
* Support all other departments as needed to support company goals while upholding company values.
